5 to 6 lb. venison
2 large bell peppers, chopped
3 tbsp. onion, chopped
1 cup ginger ale
2 (6 oz.) cans apple juice
3 tbsp. minced garlic
Salt, pepper and cayenne
pepper to taste

Directions:
Directions:
Season venison using salt, pepper, cayenne pepper, and garlic. Place roast in roasting pan. Add bell pepper/onions. Pour ginger ale and apple juice over roast. Cover in refrigerator for 24 hours. Bake, covered, at 325º for 2 hours. Baste often.
