3 cups flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tbs cinnamon
3 eggs, beaten
2 tsp vanilla
2 cups grated zucchini
2 cups sugar
1 cup vegetable oil

Directions:
Directions:
1. Preheat oven to 350. Spray loaf pan with non-stick spray.
2. Mix sugar, oil, eggs and vanilla in a large mixing bowl.
3. In a separate bowl, combine all dry ingredients.
4. Alternate adding dry ingredients and grated zucchini to the sugar/oil/egg/vanilla mixture.
5. Bake for 1 hour. Could take a little longer. Toothpick test to make sure the bread is not gooey inside.
