Ingredients: One very large piece of meat or poultry (whatever is on sale) BBQ seasonings (buy online in bulk) BBQ sauce (bought in bulk) Your favorite roasting veggies (experiment!) Smoking wood chips (Apple, Cherry, Mesquite, experiment!)

Directions:OK Dude, after a long week stuck indoors in some office, the last thing you want to do is cook inside in a kitchen. This recipe will impress your guests, and provide 4-5 future meals as well (see also my soup recipe).
Thaw the large meat (or poultry) piece overnight (you can also marinade overnight, but I have found that unnecessary overkill).
Start your grill in the next morning and soak the wood chips in water. While it is starting, rub the piece all over with available seasonings. Get the grill at about 250-275 Degrees F (vents almost closed). Put some wet chips on the coals to get it smoking.
Place the piece on the grill away from the fire ( in an aluminum pan if you have one) and smoke for several hours, turning over every hour or so to cook evenly, and adding new, wet smoking chips. The smoking time will depend on the size of the piece. Experience and probe cutting will help prevent overcooking. Undercooking can always be corrected in the oven or on the skillet.
During the last hour, place some available veggies near the burning coals and roast, lathering with olive oil and pepper. When almost done, lather on some BBQ sauce. |
