1 lb. veal cutlets
2 shallots or 4 green onions
1/2 lb. mushrooms, sliced
2 Tbsp margarine or butter
2 Tbsp fresh chopped parsley
1/2 cup shredded Gruyere or Swiss cheese
1 tsp dried tarragon
1/4 cup white wine

Directions:
Directions:
Pound cutlets thin. Chop shallots. Saute mushrooms and shallots in margarine. Add parsley and cheese. Spread mixture onto cutlets. Roll up and secure with wooden toothpicks. Place in baking dish. Sprinkle with tarragon. Add wine Bake in 325º oven 30-40 minutes.
