Ingredients:  
1 c sliced fresh mushrooms
11/2 c chopped onion
1/4 c chopped red pepper
2 Tbsp margarine
2 c cooked rice
2 Tbsp chopped fresh parsley
1/2 tsp poultry seasoning
1/2 tsp salt
1/8 tsp pepper
1 1/3 lbs haddock fillets
1 Tbsp lemon Juice
1 medium tomato sliced
1/2 c shredded Cheddar cheese

Directions:
Directions:
Saute mushrooms, onion and pepper in margarine until onions are tender, 5 minutes. Stir in rice, parsley and seasoning; mix well. Place in greased 2 qt casserole. Brush fish with lemon juice and arrange on top of rice. Spread tomato slices over top. bake in preheated 350 oven for 20 minutes. Sprinkle cheese over tomatoes and bake until cheese is melted, about 5 minutes.
