1 tsp. olive oil
1/2 lb. Polish sausage, quartered and sliced
1 large garlic clove, minced
1 large onion, chopped
7 cups chicken broth
1 tsp. dried parsley
1/2 cup celery, chopped
1/2 tsp. basil
dash oregano
1 cup carrots, sliced
1 cup zucchini, sliced
1 cup frozen sliced Italian green beans
15 oz. can pinto beans, undrained
15 oz. can stewed tomatoes, chopped
1/4 cup small pasta (Acini di Pepe) or 1/2 cup elbow or shell macaroni
grated Parmesan cheese

In a large pot, sauté Polish sausage in olive oil until lightly browned. Add garlic and onion; sauté until tender. Add all the remaining ingredients except for Parmesan cheese. Bring to a boil; reduce heat and simmer for 45 minutes. Serve with grated Parmesan cheese.

I found the recipe for Whistle Stop Minestrone in the LA Times newspaper and have made a few modifications. This was a "have to have" soup whenever my parents came to visit California. It was one of my mom's favorite soups, and when I visited Chicago, I usually made two batches and froze it in individual portions.
