1 1/2 c. whole wheat flour
1 1/2 c. ground flax seed
1 c. packed brown sugar
1 T. baking powder
1/2 t. salt
1/2 t. nutmeg
2 t. cinnamon
2 c. milk
1/2 c. oil
1 beaten egg

Directions:
Directions:
Combine dry ingredients. Stir together egg, oil, and milk. Add to dry ingredients, stir until moistened.
Will make 24 muffins. If using paper baking cups, spray bottom and sides as you would muffin tins for easy removal after baking. Fill muffin cups 2/3 full.
Bake at 350º approximately 20 minutes or until toothpick enserted in center comes out clean.

Excellent source of Omega-3's. One muffin a day is sufficient. These freeze very well.
