6 c spinach
2 c fresh basil (sometimes I use less or none at all)
1/2 c olive oil
2 cloves garlic, minced
1/2 c pine nuts
4 oz prosciutto, chopped
Salt and Pepper to taste
3/4 c grated parmesan cheese

Directions:
Directions:
*Combine the spinach and basil in a large salad bowl.
*Heat the olive oil in a skillet over medium heat. Add the garlic and pin nuts, mix well
*Saute until the pin nuts are brown. Add the prosciutto, mix well
*Cook just until heated through, stirring constantly. Pour over the spinach mixture, tossing to coat. Season with the salt and paper. Sprinkle with the parmesan cheese.
