5 cup peeled, chopped apples
1 cup sugar
1 cup dark raisins
1/2 cup chopped pecans
1/4 cup canola oil
2 tsp. vanilla
1 egg, beaten
2 1/2 cup Sifted flour
1 1/2 tsp. baking soda
2 tsp. cinnamon

Directions:
Directions:
In large mixing bowl, combine apples, sugar, raisins, nuts. Mix well. Let stand 30 minutes. Stir in oil, vanilla, and egg. Sift together dry ingredients and stir into apple mixture gradually just to moisten. Turn into oiled 9 by 13 pan. Bake 35 to 40 minutes at 350º. Cool before serving.

( better the next day; can sprinkle with confectionary sugar or drizzle with a frosting).
