4 c. All Purpose Flour
1 1/2 tsp. salt
1 1/4 c. sugar
2 tbsp. Vanilla
3 c. Pecans
2 c. Butter
6 oz. Cream Cheese

Directions:
Directions:
Heat oven to 350º

Spread the chopped pecans in a single layer onto a cookie sheet and toast for 5-10 minutes.
Whisk together flour and salt, set aside. Cream together butter, cream cheese and sugar until fluffy, add vanilla. Slowly incorporate flour into the butter mixture. Add 1/2 of the pecans into the cookie dough mix well. Shape the dough into two rolls or logs and roll them into the rest of the pecans. Cover with plastic wrap and freeze for two hours. (minimum) Remove cookie dough logs from freezer and slice into the size cookie of your choice. Place on baking sheet and bake for 15 to 18 minutes or until bottom of the cookies are brown.
