4 Lbs Cooked ditalini pasta Drained & cooled
2 Lbs Tomato Diced
2 Lbs Cooked kidney beans Drained & rinsed
1 Lb Potato Diced small, steamed, cooled
1 Lb Zucchini Diced small, blanched &
shocked
1 Lb Baby spinach
8 Oz Celery Diced small
1 Lb Carrot Peeled, diced small
½ Cup Fresh basil Washed & chopped
½ Cup Fresh parsley Washed & chopped
8 Oz Parmesan cheese Grated
1 Tsp Salt
1 Tsp Ground black pepper
16 Oz Lite Italian salad dressing

1. Combine cooked pasta with remaining ingredients. Adjust seasoning if necessary.
Notes: Serve on salad bar, as side dish or on top of lettuce as Quik Pik or Snack Pack.
