2 Lbs Dried soba noodles (sub regular spaghetti if
necessary)
1 Oz Sesame oil
24 Oz Edamame beans, shelled,
cooked, frozen
Thawed
24 Oz Sweet peas, frozen Thawed
1 Oz Oil, olive blend
4 Lbs 31-40 shrimp Peeled, deveined
˝ Tsp Salt
To taste Ground black pepper
1 Oz Garlic Minced
2 Lbs Red bell pepper Cut in strips
1 Cup Scallion Thinly sliced
12 Oz Sesame ginger salad dressing Ken’s or similar Asian dressing
12 Oz Peanuts* Dry roasted
*Omit this ingredient if making this dish for school / summer camp

1. Cook the soba noodles in boiling salted water 5-7 minutes or until al dente. Drain
(reserve cooking water) noodles and immediately toss with sesame oil to coat and
prevent sticking.
2. Heat oil in large sauté pan over medium heat. Season shrimp with salt and pepper and
sauté, after 3 minutes add garlic. Cook until shrimp turn pink, about 1 minute more.
3. In a large bowl combine the sesame oil coated noodles with the edamame beans, snow
peas and shrimp garlic mixture and next 3 ingredients (red bell pepper, scallion and
dressing).
4. Garnish with peanuts.
