48 Fl oz Water
24 Oz Quinoa Rinsed
1 Tbsp Vegetable base
24 Oz Sweet corn kernels, frozen Thawed
24 Oz Cherry or grape tomatoes Halved
1 Cup Fresh parsley Washed & chopped
½ Cup Scallions Washed & chopped
3 Oz Oil, olive blend
4 Fl oz Lemon juice
3 Fl oz Red wine vinegar
1 Tsp Salt
1 Tsp Jalapeno, fresh Seeded & finely diced

Directions:
Directions:
1. Bring water to a boil. Add rinsed quinoa and vegetable base. Return to a boil, stir, cover
and reduce heat to low. Let sit over low 15 minutes or until liquid is completely absorbed.
Cool in single layer on sheet pan.
2. Once quinoa is cool, add remaining ingredients, toss gently to combine.
