2 Lbs Lentils, uncooked Sorted
1 Gallon Water Boiling
1 Lb Sweet potato Steamed, peeled, cooled, small
diced
4 Oz Red onion Fine diced
2 Fl oz Red wine vinegar
2 Oz Olive oil
1 Tsp Curry powder
2 Tsp Salt
1 Tsp Ground black pepper
1 Ea Orange, juiced
½ Cup Fresh parsley Washed, dried, chopped
4 Oz Dried cranberries

Directions:
Directions:
1. Add lentils to boiling water, reduce heat to simmer and cook 25 minutes or until al dente.
Drain and cool.
2. Once lentils are cool add cooled sweet potato and remaining ingredients. Toss gently to
combine.
