16 Oz Quinoa, dry Rinsed in mesh sieve
30 Fl oz Water
1 Tbsp Vegetable base
2 Tbsp Oil
6 Oz Zucchini Small dice
6 Oz Summer squash Small dice
2 Oz Red bell pepper Small dice
¼ Cup Fresh cilantro Washed & chopped
¼ Cup Scallion, white & green Washed & chopped
¼ Cup Fresh parsley Washed & chopped
4 Oz Raisins
1 Each Orange, zest & juice
1 Tsp Fresh jalapeno Seeded & minced
2 Tbsp Cider vinegar
2 Oz Almond slices Lightly toasted
1 Tsp Salt
To taste Ground black pepper

1. Rinse quinoa well to remove bitter starch from grain.
2. Bring water to a boil, add quinoa and vegetable base. Bring to a boil, stir once, cover,
reduce heat to low and let simmer until all liquid is absorbed, about 15 minutes. Check
once during cooking, add more water if necessary. Once quinoa is cooked, spread in
single layer on sheet pan and cool to below 40°F.
3. Heat oil in sauté pan. Quickly sauté zucchini, summer squash and red bell pepper until
tender. Cool completely.
4. Add zucchini mixture and remaining ingredients to cooled, cooked quinoa. Toss to
combine, season to taste with salt & pepper.
