2/3 cup dried, sweetened cranberries
3/4 cup powdered sugar
1 cup unsalted butter, softened
1 tsp. vanilla extract
1/4 tsp. salt
2 cups flour
2 oz. white chocolate, melted, cooled slightly
sugar (optional)

Directions:
Directions:
In a food processor, blend cranberries and powdered sugar until cranberries are finely chopped; transfer to a mixing bowl. Blend butter into cranberry mixture until smooth; add vanilla and salt. Stir in flour until completely combined. Press dough evenly into a parchment-lined 9x9-inch pan. Bake in a preheated 350º oven for 30 minutes or until firm and pale brown. Let cool in pan, about 10 minutes. Run a knife around the edges and lift shortbread from the pan. Gently score shortbread into 12 4-inch or 18 3-inch triangles and let cool completely. Cut cookies following score marks. Place melted chocolate in a plastic bag, snip off a small corner and drizzle white chocolate over cookies. Sprinkle with sugar and tap off excess (optional).

This fruit-studded shortbread recipe is very simple to make. They are elegant for the holidays and the sprinkle of sugar seems to make them sparkle!
