9.5 oz. can or 2 cups roasted salted cashews
1 cup sugar
1/2 cup white corn syrup
1 tsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

Directions:
Directions:
Grease a cookie sheet with butter; set aside. Put sugar and corn syrup into 2-quart microwave dish; stir well. Microwave uncovered for 4 minutes; stir again. Heat 3 minutes longer or until light brown; stir again (be careful, it is very hot). Remove from the microwave and add the butter and cashews. Put back in microwave for 30 to 60 seconds or until it turns caramel color. Remove from the microwave and add the vanilla and baking soda; stir quickly. Pour onto the greased pan and evenly spread the mixture out. Let cool for 30 minutes. Break into pieces and store in cookie tins.

This recipe is so simple and fool-proof. If you want to change it up, you can make a great cinnamon peanut brittle. Instead of stirring in the cashews, stir in 2 cups salted peanuts and 1/2 teaspoon ground cinnamon.
