2 lb. ricotta cheese
1 box lasagna noodles
2 eggs
2 1/2 cups grated Parmesan cheese
1 lb. mozzarella cheese, shredded
2 tbsp. parsley
oil
salt and pepper

Directions:
Directions:
Simmer meatball in sauce. Bring large pot of salted water to boil. Stir in lasagna noodles. return to a boil, stirring frequently. Cook pasta until al dente, 8 to 10 minutes. When noodles are cooked, strain and rinse with cold water. Sprinkle a little oil over noodles and toss gently to keep from sticking together.

Mix ricotta cheese with eggs, parsley, 1/2 c. parmesan cheese, salt and pepper. Remove meatballs from sauce and mash with a fork, add sauce as needed to keep meat moist.

To assemble lasagna, ladle about 3/4 c. of sauce over bottom of pan. Arrange noodles lengthwise to cover bottom of baking dish. Spoon enough meat and sauce to cover noodles in an even layer. Sprinkle the sauce with 1/2 grated parmesan and 1/2 c. mozzarella cheese. Arrange second layer of noodles over meat. Spread the ricotta mixture evenly over the noodles. Arrange another layer of noodles over the ricotta. Spread remaining meatballs and 1 c. sauce over noodles. Sprinkle with 1/2 c. grated parmesan and 1/2 c. mozzarella cheese. Cover with final layer of noodles. Top with sauce and cheese.

Cover loosely with foil and bake at 350 for 45 minutes. Let stand 20 to 30 minutes before serving.

If making this when Uncle Mike will be around, leave one corner without ricotta cheese. Just do 3 layers of meat for him.
