11 oz. dried apricots
1 1/2 cups water
3/4 cup sugar
2 tsp. grated lemon rind
1/2 cup chopped candied red cherries
4 cups flour, sifted
2 tsp. salt
1 1/2 cups butter
1/4 cup lemon juice
milk
sugar

Cut apricots into quarters. In a medium saucepan, combine apricots, 1 cup water and 1/2 cup sugar. Cover and heat to simmering; cook 5 minutes. Turn off heat and let stand covered until cool. Add 1 teaspoon lemon rind and mash. Stir in cherries. In a mixing bowl, combine sifted flour, remaining 1/4 cup sugar and salt. Cut the butter and 1 teaspoon lemon rind into dry ingredients until mixture resembles fine meal. Add lemon juice and remaining 1/2 cup water, a small amount at a time. Mix well after each addition. Shape dough into a patty. Cut into 3 equal pieces. Roll each piece on a lightly floured board into a rectangle 12 inches long and 5 inches wide. Spoon filling lengthwise down the center of each piece of dough. Fold the 1 inch of uncovered dough on each side over filling. Brush top of crust with milk and sprinkle with sugar. Bake in a preheated 400º oven for 15 to 18 minutes. Cut into 1-inch slices.

This was always one of mom's favorite Christmas cookie recipes. She made them every year for her cookie boxes. They take a bit of work, but you will love the sweet fruity burst that comes from the apricots and cherries.
