1 pound beef top round roasted cubed
8 ounces celery Chopped
8 ounces onions Chopped
8 ounces carrot Chopped
1 gallon water
˝ teaspoon black pepper
1 teaspoon salt -- or to taste
1 each bay leaf
4 ounces pearl barley
1 tablespoon fresh parsley Chopped

Directions:

Brown beef cubes in kettle. Drain off fat.
Add celery and onions. Sauté until tender.
Add remaining ingredients. Bring to a boil. Lower heat and simmer for 1 hour. Taste for
seasoning. Remove and discard bay leaf. Garnish with parsley just before serving.
