2 tablespoons olive oil blend
8 ounces onions Minced
6 ounces celery Chopped
4 ounces fresh Carrots
3 quarts water
8 ounces red potatoes
4 ounces zucchini Sliced
4 ounces peas
4 ounces corn kernels
¼ teaspoon ground thyme
¼ teaspoon black pepper
1 tablespoon fresh parsley Chopped

Directions:
Directions:
Heat oil in large pot. Add onion, celery, carrots and saute until tender.
Add water and potatoes to pot, simmer about 20 minutes.
Add zucchini, peas and corn, return to simmer and cook until vegetables are tender.
Add seasonings to soup. Heat to 180°F.
