1 gallon low sodium chicken broth
8 ounces onion Chopped
8 ounces celery Chopped
8 ounces carrot Diced
1 cup rice
½ teaspoon white pepper
1 pound chicken breast halves without skin, diced
¼ cup fresh parsley Chopped

Directions:
Directions:
Bring stock to a boil. Add onion celery and carrot. Cook until tender.
Add rice. Cook for about 15 minutes or until rice is tender. Add seasonings.
Add chicken and simmer for 5 minutes. Add parsley just before serving
