2 tablespoons oil
8 ounces onion finely chopped
8 ounces green peppers finely chopped
8 ounces celery thinly sliced
1 pound potatoes Diced
2 tablespoons all-purpose flour
1 gallon water
1 cup milk
1 tablespoon salt
2 tablespoons pimiento Chopped

Directions:
Directions:
Sauté onions, peppers and celery in oil until lightly soft, about 10 minutes.
Add flour to vegetables and stir until well blended.
Add water to vegetable mixture, while stirring. Add potatoes and bring to a simmer, cook about
20 minutes, until potatoes are tender.
Add pimiento and hot milk, stir to combine. Keep just below boiling point (about 180 degrees) for
service.
