¼ cup vegetable oil
8 ounces onion Chopped
4 ounces green pepper Chopped
2 ounces all-purpose flour
3 quarts water
1 ½ quarts tomato puree
3 ounces converted rice Raw
1 teaspoon salt
½ teaspoon Tabasco sauce or to taste

Directions:
Directions:
Heat oil in a large pan, add onions and peppers, saute until tender. Add flour and cook about 5
minutes.
Add water and puree, bring to boiling point, stirring constantly.
Add rice. Cook until rice is tender about 20 minutes.
Add salt. Adjust seasoning with Tabasco to taste.
VARIATION:
Tomato Barley Soup. Add 3 ounces barley in place of rice.
