2 1/2 cups sifted flour
1/4 tsp. ground cardamom
dash of salt
1 cup butter or margarine, softened
1/2 cup sugar
1 egg
1/2 tsp. vanilla extract
1/4 tsp. rum extract
halved candied cherries

Directions:
Directions:
In a large bowl, sift flour, cardamom and salt; set aside. In another bowl, cream butter or margarine with sugar until fluffy; beat in egg, vanilla and rum extract. Stir in dry ingredients, a third at a time, blending well to make a soft dough. Do not chill. Fit sunburst disk on a cookie press. Fill with dough. Press out cookie dough onto parchment-lined cookie sheets. Place half a candied cherry in the center of each one. Bake in a preheated 350º oven for 10 minutes or until firm and delicately golden. Remove from cookie sheets. Cool completely on wire racks.

These cookies stay fresh, even if made two weeks in advance. Just layer between waxed paper and cover tightly.
