1 pound navy beans
1 gallon boiling water
6 ounces onion Chopped
6 ounces celery Diced
½ teaspoon black pepper
1 each bay leaf Whole
1 tablespoon salt
1 tablespoon fresh parsley Chopped
as needed water

Directions:
Directions:
Wash beans. Add boiling water. Cover and let stand 1 hour or longer. Simmer beans for about 1
hour.
Add seasonings to beans. Cook until beans are tender, 1-1 1/2 hours. Add water to make
volume of 1 gallon. Remove and discard bay leaf
Check seasoning. Add salt if needed. Heat to 180°F. Garnish with parsley.
