8 ounces onion Chopped
3 quarts water
1 quart canned tomatoes Diced
1 pound potatoes Chopped
6 ounces fresh carrots Diced
8 ounces celery Chopped
2 teaspoons salt
½ teaspoon black pepper
1 each bay leaves
½ teaspoon ground thyme
1 pound cod fillet or other white fish
8 ounces surimi seafood Diced
1 tablespoon chopped fresh parsley

Directions:
Directions:
Combine onion, water, tomatoes, potatoes, carrots and celery in large kettle, add seasonings.
Bring to a boil. Reduce heat. Simmer 40-45 minutes or until vegetables are tender. Remove bay
leaves before serving.
Add fish and surimi. Cover and simmer 5-10 minutes.
Sprinkle parsley over soup before serving.
