Pastry for 9 inch pie
6 to 7 apples, peeled, cored, and sliced thin ( apx. 6 c.) -Note below
1/2 c. brown sugar
2 tbsp. flour
1/2 tsp. cinnamon
dash each salt and nutmeg
2 tbsp. butter
sprinkle lemon juice

Most apple pies are made with only tart apples like granny smith, however we have found that we like to add a bit of other flavor and texture to the pie by replacing a couple of the apples with honeycrisp apples.

In large bowl sprinkle apples with lemon juice. Add sugar, flour, cinnamon, salt and nutmeg to apples and mix gentlely with hands. Add to pie crust. Dot with butter. Cover with top crust, cut small vent holes into crust top. Sprinkle lightly with sugar. Cover edge with foil to prevent over browning and boil over. Bake at 400º for 55-60 mins.

When I was little, I would help grandma make this pie for Thanksgiving and Christmas every year. Then when I took over making pies for the holidays, this pie became Isaac's pie. He would help me make it every year. So don't let him fool you, he knows how to make this!
