1 c. grated sharp chedder (set aside)
1 lb ground beef (more if you prefer meaty goulash)
1/2 tsp. Trader Joe's Everyday Seasoning Blend
OR
1/2 tsp ea: garlic powder, chili powder, sweet paprika, onion powder, salt, fresh ground pepper. Sprinkle spices over meat and lightly brown in large skillet or pot over med heat.
ADD:
1 c. each- diced onion and bell pepper. Continue to cook on low until veggies are slightly soft.

To this add the following ingredients:
1 1/2c. fresh corn OR 1 small package frozen OR 14 oz drained can
16 oz diced fresh tomatoes (may sub canned or stewed)
1 qt tomato or V-8 juice
1 1/2 -2 c. elbow mac or similar pasta you have on hand
extra salt and pepper to taste

Simmer covered on low heat for approx. 30 mins
or until the pasta is tender and liquid is absorbed.

Additional liquid (water, juice or beef broth) may be needed to completely cook pasta so stir mixture occasionally and check pasta for doneness. The last 5-8 minutes of cooking sprinkle cheese over top to melt. Sometimes for a change I use Italian seasonings and a blend of Italian cheese instead of chedder.

This was a quick fix for Mother to get on the table for us and she usually added a salad and a pot of home canned green beans. Daddy worked hard every day as he farmed the family farm which my Grandfather Luke Sr, his brothers and my Great Grandfather Herchel Sonner, carved out of sagebrush in 1903
