Grandma Gottschalk Sauerkraut and Dumpling Recipe

4 large potatoes grated like hashbrowns
6 slices of bread
1 egg beaten
2 T flour ( could use more)
salt and pepper to taste

Directions:
Directions:
Toast the slices of bread until they are completely dried out. Break up into small cubes. In large mixing bowl, add grated potatoes, cubed bread, salt and pepper to taste and 2 T of flour. You may need to add more flour if the potatoes are juicy. Mix together and add beaten egg. Mix well again. Form the mixture into baseball size balls. Pressing the balls firmly together so they don't fall apart.

Add the sauerkraut dumpling to the cooked sauerkraut and spare rib pot, making sure that there is enough juice in pot so that the dumpling can sit on top and cook without burning. Cook dumpling for at least 1 hour on simmer.

Grandma Gottschalk made these at home and passed the recipe on to Bernice and mom. Bernice gave me a cooking lesson one afternoon at mom's house on how to make these dumpling. As usual, there was never a dull moment cooking with Bernice and mom. They are really worth the effort if you like sauerkraut!
