4 Pounds Catfish fillets Cut into 5-ounce portions
1 Tablespoon Cajun seasoning
¼ Cup Cornmeal
2 Tablespoons Oil
8 Ounces Onions Julienne
4 Ounces Celery Cut on the bias
4 Ounces Green bell pepper Diced
3 Each Tomatoes Cut into 1-inch cubes
1 Tablespoon Fresh parsley Chopped
12 Cups Brown rice Cooked in water
1 Tablespoon Salt For cooked rice
2 Teaspoons Ground black pepper For cooked rice
6 Cups Frozen sweet corn
kernels steamed

Directions:

1. Preheat oven to 350°.
2. Season fish with Cajun seasoning, dust one side with cornmeal.
3. Heat oil in pan, place fish, cornmeal-side down, in hot oil to sear lightly. Remove
fish from pan, place fish, crust side up in a baking pan.
4. Add vegetables to pan, sauté lightly, remove from pan and add to fish.
5. Bake fish and vegetables in 350° oven and bake until cooked through and
thermometer registers internal temperature of 145 degrees for 15 seconds.
6. Sprinkle with parsley. Serve one piece of fish with about 2 ounces of the
vegetables.
7. For ‘500 Calorie Meal’ serve with 1 cup steamed brown rice (seasoned with salt
& pepper) and ½ cup sweet corn kernels.
