3 T. EVOO
1/2 medium onion, finely diced
1 lb. boneless skinless chicken breast, cut in pieces
2 cloves garlic, minced
1 tsp. kosher salt and fresh ground pepper
1 cup uncooked white rice
2 1/2 cups broccoli, cut in pieces
2 1/2 cup chicken broth
2 cups shredded cheddar cheese

In a large skillet, saute onions in 2 T. olive oil over medium heat. Season chicken with salt and pepper. When onions are soft, increase heat to medium high. Add chicken to pan. Brown chicken and add garlic. Cook one minute. Push chicken aside and add olive oil to pan. Add uncooked rice to olive oil and saute. Add chicken broth to pan and bring mixture to a boil. Lower heat to a simmer, cover. Cook about 12 minutes. Sprinkle broccoli evenly over chicken mixture then stir to combine. Cover and cook another 8 minutes. Remove from heat and stir in cheese.
