1 lb. kidney beans
1 tsp. baking soda
Ham hocks
1 c. chopped celery
2 onions, diced
1 tbsp. parsley
1/8 tsp. garlic powder
1/8 tsp. thyme
1 tsp. oregano
salt and pepper to taste

Directions:
Directions:
Put ham hocks in large pot and cover with cold water. Cook until tender. Remove hocks and cool. Remove meat and shred into workable pieces. Return meat to water and discard bones and skin. Put beans in a large pot and cover with cold water and 1 tsp. baking soda. Soak for one hour. Rinse thoroughly. Add enough cold water to beans to cover well. Bring to a boil. Add ham hocks and the water they were cooked in. Add celery, onions, parsley, garlic powder, thyme, oregano, salt, and pepper. Cook at least five hours on low heat. Stir occasionally. Serve over cooked rice.
