1lb pollock fillets
Dry white wine
1 small leek,chopped
1 small onion chopped
1 bunch watercress or parsley, chopped
2 Tbsp margarine or butter
2 c fish stock or bottled clam juice
2 c chicken broth
1/4 lb potatoes, peeled and diced
1 tsp salt
1/4 tsp pepper
1/2c or more heavy cream

Directions:
Directions:
Poach fish in enough white wine to cover for 10 minutes; set aside. Saute leek, onion and watercress in margarine and cook at low heat for 10 minutes, stirring occasionally. Add fish stock, chicken broth and potatoes; cook for approximately 40 minutes. Cool mixture slightly. Cut pollock into small pieces and add to the cooled mixture along with salt, pepper and cream. Cook over low temperature until heated. garnish with watercress sprigs.
