2 tbsp butter
2 tbsp olive oil
1/2 large onion, diced
2 C long grain white rice
3 C chicken stock
1 1/2 tsp salt
1 pinch saffron (optional)
1/4 tsp cayenne pepper

Directions:
Directions:
1. Preheat oven to 350 degrees
2. Melt butter and olive oil in sauce pan, add onion and cook 7-8 mins until lightly browned; remove from heat
3. Combine rice and onions in 9 x 13 inch casserole dish on a baking sheet, stir to coat rice thoroughly
4. Combine chicken stock, salt, saffron, and cayenne in sauce pan; bring to a boil and simmer for 5 mins
5. Pour chicken stock mixture over rice/onions and stir to combine
6. Cover tightly with aluminum foil
7. Bake for 35 minutes; allow to rest covered for 10 more minutes
