3 c. milk
3 egg yolks
1 c. sugar
salt
7 T. corn starch
1 tsp. vanilla
1 T. butter
For chocolate pie: 2 T. cocoa and additional 1/4 c. sugar
For coconut cream pie: add desired amount of shredded coconut
For banana cream pie: add sliced bananas to cooled filling

Mix sugar, salt and cornstarch in microwave-safe bowl. Add milk and stir. Microwave on high, stirring occasionally, until bubbly and thickened. Beat egg yolks. Add several spoons of hot mixture to egg yolks and stir. Add Egg yolks to milk mixture and stir. Microwave for another minute or two. Add vanilla and butter. If making a chocolate pie, add cocoa to sugar/cornstarch mixture and increase sugar by 1/4 cup. Put in baked pie crust and top with meringue.
