Ingredients: 2 (8 ounce) boneless skinless chicken breasts, grilled 2 tablespoons butter 20 medium raw shrimp, peeled, tail removed and cleaned 1 cup fresh button mushrooms, cleaned and sliced 1 red bell pepper 1 green bell pepper 6 green onions, thinly sliced 1 cup sun-dried tomatoes, sliced 1 1/2 tablespoons Cajun seasoning salt, to taste 3/4 teaspoon ground black pepper 1/2 cup Parmesan cheese, grated 1 teaspoon cayenne pepper 1 can (10 3/4 oz) cream of mushroom soup 1/4 cup milk 1 can (14.5 oz) diced tomatoes 12 ounces dry fusilli or rotini pasta

Directions:Season and grill the chicken breasts until done. Cool and slice into bite size pieces. Sauté shrimp.
Add butter to a large sauté pan on medium heat.
Once butter is melted, add mushrooms, sun-dried tomatoes, peppers until vegetables are tender and mushrooms are lightly browned. Add the sliced green onion, minced garlic, chicken and shrimp; cook, stirring constantly, for 1 minute. Stir in Cajun seasoning, cayenne pepper, and black pepper; cook, stirring for another minute. Add the soup, milk, and tomatoes. Bring to a simmer. Stir in grated parmesan cheese and the cooked pasta (al dente according to package directions). Heat through. Serve. |
