1/3 c margarine or butter
1 1/2 lbs shrimp, peeled and deveined
1 clove garlic, minced
12 oz fresh mushrooms, sliced
1/2 c chopped green pepper
2 small onions, sliced
2 c diced fresh tomatoes
1 tsp salt
3/4 tsp basil or thyme
1/2 tsp paprika
1/4 tsp black pepper
1 Tbsp cold water
2 tsp lemon juice
4 tsp cornstarch

Directions:
In a large skillet melt margarine. Add shrimp and garlic. Cook and stir until shrimp turn pink; remove from skillet. Add mushrooms, green pepper and onions; cook and stir until onions are transparent and mushrooms are golden, about 5 minutes. Add tomatoes, seasonings and shrimp. Cover and simmer for 5 minutes. Combine water, lemon juice and cornstarch; stir into skillet. Cook and stir until slightly thickened. Serve over rice if desired.
