1 1/2 lbs. fresh broccoli spears
2 lbs. sole or flounder fillets
1 tsp. salt divided
1 c. shredded Cheddar cheese
1/4 c. dry white wine
1/4 c. water
2 Tbsp margarine or butter
2 Tbsp sliced green onion
1 Tbsp lemon juice
1/2 bay leaf

Directions:
Steam broccoli for 5 minutes or until tender-crisp but not fully cooked; drain. Divide fish and broccoli spears into 6 equal portions. Sprinkle fish with 1/2 tsp. salt. To assemble roll ups; place a small bundle of broccoli spears on each fish portion, alternating direction of florets within each bundle; sprinkle with cheese and roll up. In large skillet combine wine, water, margarine, green onion, lemon juice and bay leaf; bring to boil. Reduce heat. Add roll-ups, seam side down; sprinkle with remaining salt. Cover and simmer slowly for 12-15 minutes, or until fish flakes easily. Using wide spatula transfer roll ups to warm serving platter, reserving broth. Turn heat to medium high and reduce broth until slightly thickened. Remove bay leaf. Pour sauce over roll ups. Sprinkle with paprika.
