20 Pound Turkey
2 sticks of butter
2 TBS fresh sage
2TBS fresh Parsley
2 TBS Chopped Garlic
2TBS fresh Rosemary
2TBS shallot chopped
2 Lemons quartered
2 oranges quartered
2 garlic bulbs
2 onion quartered
4 cups chicken broth
salt
pepper
olive oil rosemary sprigs

Mix butter with fresh chopped sage,parsley,rosemary,garlic and shallot. Clean a completely thawed turkey, removing the giblet pouches and neck. Rub inside of all cavities generously with salt. Loosen the skin over the breasts and rub butter mix between the skin and meat. Stuff Turkey with oranges,lemons, garlic bulbs,onion and rosemary sprigs. Drizzle the outside skin with olive oil and season with salt and pepper. Preheat the oven to 450°F: Position an oven rack in the bottom third of your oven and preheat the oven to 450°F. When ready to roast, pour two cups of broth or water into the roasting pan. Place the turkey in the oven and turn down the heat to 350º F. Roast the turkey: The rule of thumb for cooking a turkey is 13 minutes per pound. While the turkey is roasting, baste the turkey every 45 minutes. To baste, remove the turkey from the oven, close the oven door (don't let that heat out!), tilt the pan and use a turkey baster or spoon to scoop up the pan liquids and drizzle them all over the turkey. Cover the turkey with foil when the skin is browned. When the temperature of the turkey reaches 165º or the indicator pops, remove from oven and cover with foil to rest. The turkey needs to rest at least 15 min before slicing. Use this time to make gravy.(see sauce section)

We have done this recipe in the oven, or for a twist, cook it on the grill covered with bacon strips on bacon strips on bacon strips. It is always delicious.
