1½ Pounds Salmon fillet
1 Teaspoon Olive oil
¾ Teaspoon Salt
½ Teaspoon Ground black pepper
1 Tablespoon Lemon juice
3 Tablespoons Mustard, dijon
½ Cup Fresh parsley Chopped
¼ Cup Fresh dill Chopped
¼ Cup Fresh tarragon
4 Cups Mesclun

Directions:
Directions:
1. Preheat oven to 355°. Coat sheet pan with olive oil. Season fish with salt and
pepper and place skin side down on sheet pan and bake until internal
temperature registers 145° OR grill to order.
2. Combine lemon juice, mustard, fresh herbs and set aside.
3. To serve, place salmon fillet atop greens and dollop 2 Tablespoons mustard-herb
mixture on salmon.
