-1 lb good beef (I like sirloin tip) cut into small bite size pieces.
- 3 med potatoes cut into bite size pieces
- 1 large onion chopped into 1/2 inch pieces
- 1 lb bag frozen mixed vegetables (fresh can be used)
- 1 or 2 14-15oz cans diced tomatoes, any flavor
- 1 enveloped onion soup mix
- 2-3 cans V8 original or low sodium to fill up the pot
- Ground pepper to taste

-Place above ingredients In a crock pot (recommended) on high or low simmer for at least 6 hours
-Some water may be added to fill the crock pot if needed. Be careful, not to "water it down"
-Fresh ground pepper to taste. Recommend at least 1/2 teaspoon
-Stir occasionally on the stove. You may need to add water as it evaporates.
- In a crockpot with the lid on, let it go, stir before serving with good bread.
