1 baked pie shell
3 eggs
1 egg yolk
1 cup sugar
the rind of 2 lemons
the juice of 2 lemons
1/2 cup butter
Meringue:
3 egg whites
1 tbsp water
1/4 tsp cream of tartar
6 tbsp sugar
3/4 tsp vanilla

Directions:
Directions:
Combine the eggs, egg yolk and sugar. Stir and cook in a double boiler until thick.

Remove the custard from the fire. Add the lemon rind, juice and butter. Cool the custard. Pour it into the baked pie shell.

Make the meringue. Beat the egg whites and water until frothy. Add cream of tartar and whip until stiff. Add sugar slowly then beat in vanilla. Continue beating the meringue for several minutes until it holds its shape well.

Spoon the meringue onto the filled pie and bake at 300º for 15 to 20 minutes.

This was Daddy's favorite and we made it for him for his birthday every year. The custard will take a day to get thick enough to hold its shape upon cutting. However, we never waited that long and ate it with a runny custard. Yum!
