7 lbs. water melon rind, cubed
7 cup sugar
2 cup white vinegar
1/2 tsp. oil of cloves
1/2 tsp. oil of cinnamon
salt water solution, 1/4 cup to 1 quart

Directions:
Directions:
Trim thin, dark green outer skin from rind. Soak watermelon cubes in salt water for 3-4 hours. Drain, rinse and cover with cold water. Cook until tender but not soft. Drain. Combine sugar, vinegar, cloves and cinnamon; bring to boiling and pour over the rinds. Let stand over night. In the morning, drain off the syrup. Reheat the syrup and pour over cubes again. Repeat once more. The third morning, heat cubes in the syrup and seal in hot jars. Makes 7-8 pints.
