1 1/2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 large eggs
1/2 c. buttermilk or sour cream
4 tbsp. melted unsalted butter
1 c. packed light brown sugar
1 c. peeled, cored & chopped sweet apples
1/2 c. chopped walnuts

Streusel Topping:
1/4 c. plus 1 tbsp. finely chopped walnuts
1/4 c. plus 1 tbsp. packed light brown sugar
2 tbsp. all-purpose flour
1/2 tsp. ground cinnamon
2 tbsp. melted unsalted butter
Directions:
Directions:
Preheat oven to 375º.. Grease a 12-cup muffin tin and set aside.
Into a large bowl, sift together the flour, baking powder, baking soda, salt,
cinnamon and nutmeg. In another bowl, whisk together the eggs, buttermilk or
sour cream and melted butter. Add the sugar and whisk to combine. Add to the
dry ingredients and mix until just combined. Fold in the apples and walnuts.
Divide the batter among the muffin tin cups filling about 2/3 full. To make the
streusel topping, in a small bowl combine all ingredients and stir until well
combine and crumbly. Sprinkle about 1 tablespoon of the crumb mixture over
the top of each muffin. Bake until a tester inserted in a muffin comes out clean,
about 25 minutes. Remove from the oven and let sit in the muffin tin for
10 minutes. Turn out onto a wire rack and let cool slightly before serving.º
