1 c. minced onion
3/4 c. minced celery
3/4 c. minced carrot
2 T. olive oil
3 cloves garlic
8 oz. ground veal
8 oz. ground chicken
8 oz. ground pork
8 oz. mild chicken sausage
2/3 c. dry white wine
1/2 c. chicken broth
2 tsp. minced fresh rosemary
1 bay leaf
salt & pepper
2 egg yolks + 1 egg
4 T. butter
4 T. flour
2 c. milk
3/4 c. freshly grated parmesan
freshly grated nutmeg
1/4 c. minced fresh parsley

Directions:
First make the stuffing. In a deep skillet, cook the onion, celery, and carrot in the olive oil over moderate heat stirring occasionally for 3 minutes, or until softened. Add the garlic and cook the mixture, stirring 1 min. Add the meat mixture and cook, stirring occasionally until no longer pink. Add the wine, reduce for 1 min. and stir in the broth. Add the herbs, bay leaf, salt & pepper.

Bring mixture to a boil and simmer, covered 15 min. Uncover and reduce until almost dry. Transfer mixture to a bowl and let cool. Mix in yolks + egg until well combined.

In a saucepan over moderately low heat melt the butter, add the flour and whisk the mixture for 2 min. Add milk, nutmeg, and salt & pepper, and simmer the mixture, stirring occasionally for 5 min. or until thickened. Stir in 1/2 c. of the parmesan and parsley. Reserving 3/4 cup of cream sauce, add remaining to meat the meat mixture.

Spoon 1/4 c. meat mixture down the middle of 4 in. pasta square. Roll the pasta to enclose the filling, and transfer the cannelloni (seam side down) to a well-buttered casserole dish. Ladle the remaining 3/4 c. cream sauce over casserole. Sprinkle with a little parmesan cheese.

Bake uncovered in a 400º degree oven for 10 min. or until bubbling.

I find it more pleasing to buy the ground meats separately and combine them myself.

I have included a recipe for homemade hand-rolled pasta sheets - or can use fresh store bought.
