1 lb beef boneless steak
1 bunch broccoli
2 Tbsp cornstarch divided
3 Tbsp soy sauce, divided
1 Tbsp dry sherry
Water
1 tsp. sugar
1/4 cup catsup
2 tbsp vegetable oil
1 clove garlic, minced
1/3 cup shelled peanuts

Directions:

Cut beef across grain, diagonally into thin strips. Trim broccoli; cut into 2 in pieces. In bowl combine 1 tbsp cornstarch, 2 tbsp soy sauce, sherry 2 tbsp water and sugar. Add beef; toss to coat. Cover and refrigerate at least 2 hours. In a small bowl mix 1 tbsp cornstarch, 1 tbsp soy sauce, 1/3 c water and catsup; set aside. In skillet heat oil.Add beef and stir-fry until it loses its pink color; remove from pan. Add broccoli, garlic and 1/4 c water; bring to boil; cover and simmer 3 minutes, until broccoli is crisp-tender. Add beef, peanuts and catsup mixture; cook and stir until sauce thickens.
