Lemon Meringue Pie Recipe

Pie filling:

1 cup sugar
1 lemon for juice and zest
2 or 3 egg yolks Save the egg whites for meringue.
2 heaping Tbsp. cornstarch or flour
1 ¼ cup of water

Meringue:

Stiffly beaten egg whites
Pinch of salt
4 ½ Tbsp. granulated sugar

Directions:
Directions:
Pie filling:

Boil all ingredients together stirring until thickened.

Pour into previously baked pie crust. Your own homemade or your favorite store bought.

Let cool

Meringue:

Beat the egg whites, gradually add sugar and salt.

Spread the meringue on the pie filling.

Bake at 300 degrees, until meringue is delicately golden.

This recipe was taken from the collection of Margie Curry Weller. It is over 100 years old!!!!!!! Of course, back then the crust was always homemade!!
