1 Tbsp olive oil
! medium red onion, chopped
1 small carrot, chopped finely
1 red or green bell pepper
1/2 small jalapeno, chopped(optional)
1-2 cups kale, chopped
1-2 cloves garlic, chopped
1(15 ounce) can black beans, drained and rinsed
1(14 ounce) can diced tomatoes
1 1/2 tsp chili powder
1/4 tsp cayenne
2 Tbsp chopped cilantro
1 tsp sea salt
fresh ground black pepper

Directions:
Directions:
Over medium heat, in a large skillet, saute onion in oil for about 2-3 minutes. Add carrot, bell pepper, jalapeno, kale and garlic. Continue to cook for 8-10 minutes or until vegetables become tender. Add black beans, tomatoes, chili powder, cayenne and cilantro. Lower heat and simmer until veggies are completely cooked and flavors are blended together.
Season with salt and pepper to your taste.
