1 lb. thin sliced chicken breast (or regular chicken breast pounded with a meat tenderizer to ~1/4 inch thickness)
1 C pepper jack cheese (or really any combination of cheese you like)
1 C cooked spinach (fresh or frozen your preference, I usually do fresh -- but beware that cooks down very fast so cook way more than you think you need)
1/2 cream cheese or greek yogurt
Italian breadcrumbs
Cajun seasoning
1 egg, beaten with a small amount of milk or water

1. Preheat oven to 350 degrees
2a. For fresh spinach, wash and drain, cut off stems and slice large leaves; cook in salted, boiling water for ~10 minutes until tender and dark green; strain
2b. For frozen spinach, cook according to package directions
3. Mix spinach, cheese, cream cheese/greek yogurt; heat in microwave if you need them to blend better
4. Combine cajun seasoning and breadcrumbs
5. Dip chicken into egg, then breadcrumb/seasoning mixture, spoon spinach cheese mixture into middle and roll; pin with toothpick if necessary to hold
6. Bake 18-25 mins. until chicken is cooked
